Kareen Lai is Singapore’s 2014 ‘Mumpreneur’ of the year, and a fitness coach on a mission to shape up the nation, one mother at a time. This is her favorite, quick recipe which goes as a filling snack in between – or as a main meal, when served with some protein.

Recipe

Ingredients

  • large portebello mushrooms
  • red pepper (diced)
  • onion (diced)
  • parsley (chopped)
  • bacon (optional)
  • mozzarella
  • black Pepper

Instructions

  1. Lightly grill portobellos with bottoms facing up for 1-2 min
  2. Turn them over
  3. Fill the portebellos with the onions, red pepper & parsley. (bacon if available)
  4. Line the top with mozzarella
  5. Sprinkle black pepper
  6. Put into toaster oven and turn the timer on for 3 minutes, until mozzarella has melted.
  7. Remove and serve warm

Get the children to help

Easy tasks for younger children

  • tear parsley
  • sprinkle black pepper on top of the ready portobellos

Moderate tasks for older children

  • dice red pepper and onion
