Strawberries are packed with vitamin-C that helps our bodies to develop resistance against infections. Baked with super healthy oats, there is therefore no need to resist our delicious strawberry cake – a must at every summer party. This cake can be partially prepared in advance, whereas kids will love to get involved in putting it all together. Just be aware that those tasty berries don’t disappear from the cake before actual serving.

Recipe

Ingredients

  • 6 dl oat flakes
  • 2 dl brown or light muscovado sugar
  • 4 tbsp wholewheat flour
  • 2 tbsp cocoa
  • 1,5 tsp baking power
  • 1,5 dl coconut or other oil
  • 2 eggs

On top:

  • 1 dl whipping creme
  • 3/4 dl sugar
  • 1 tbsp cocoa
  • strawberries

 

Filling:

  • 1 dl whipping creme or natural jughurt
  • 200g mascarpone
  • 1 tbsp sugar
  • vanilla essence
  • about 500g fresh strawberries

 

Instructions

  1. greese two baking tins of about 23 cm diameter
  2. mix flour and baking power together with cocoa and oat flakes, add eggs and coconut oil
  3. spread to baking tins and bake in 175 degrees Celcius for abou 15 minutes, let cool off
  4. mix all the ingredients for the topping and filling together respectively
  5. assemble the cake and enjoy
