This nutritious chicken sandwich (or do you prefer Turkey?) is the favorite carry-on meal of the twin mother and Singapore Mumpreneur of the Year Kareen Lai. You can make it the night before, keep it in the fridge and voila …a hearty snack or lunch ready for everyone the next day. Balanced with low GI carbohydrates, protein and vitamins, it’s a perfect companion for a busy day.

Recipe

Ingredients

  • 1 whole chicken breast
  • 4 heapful tablespoons of cottage cheese (vary quantity according to preference)
  • sliced tomatoes
  • Brie cheese (sliced thin)
  • romaine leaves/ butter head leaves
  • salt & pepper to taste
  • sliced wholemeal bread

Instructions

  1. Steam chicken breast until cooked
  2. Shred chicken breast into strips
  3. Put chicken breast, cottage cheese, salt & pepper in bowl and mix until even
  4. Lay lettuce & tomatoes on slice of bread.
  5. Add in a slice of brie cheese
  6. Add chicken breast combination
  7. Lay another more lettuce
  8. Cover with another slice of bread.
  9. Voila a fully packed sandwich is ready!

Get the children to help

Easy tasks for younger children

  • Put chicken breast, cottage cheese, salt & pepper in bowl and mix until even
  • Lay lettuce & tomatoes on slice of bread.
  • Add in a slice of brie cheese

    The stuffed mushrooms are extremely appetizing and elegant dish which will decorate a table on any holiday. Though it can quite be present at the daily menu especially as cooking doesn’t demand a lot of time and forces. Only champignons in connection with feature of a structure of a hat are suitable for a farshirovka. It is better to take large mushrooms as to fill them with a stuffing much more simply.
