This super easy guacamole goes well as a side dish, or as a healthy snack between meals – served with Crudites.
- 1 ripe avocado
- 1 tbsp red onion, finely chopped
- Juice of 1/2 a lemon
- 1 clove garlic, minced
- 1 tbsp coriander, finely chopped
- Pepper and salt to taste
- Mash avocado with a fork, leaving slightly lumpy.
- Add other ingredients and stir in.
