As we learned from Nutritionist Liza Rowan’s live interview in BBC last week, potatoes are

– low in fat
– high in nutrients (especially Vitamin C, Potassium and Manganese), and
– a good source of energy and fibre.

What else do you need to know about this nutritious spud? Here are our potato facts:

In Ireland, Liza’s home country, people say ‘be aatin ’em, schkins ‘n’ all’, which translates into ‘eat your potatoes with skins on, they are (even) more nutritious this way’

If potatoes are stored below 7 degrees, the starch turns to sugars and alters the taste – keep them in a dark, cool, dry place

Keep potatoes stored away from onions, as gases emanated from each can destroy the other.

How do you recommend storing potatoes in Singapore? A 3 degree fridge seems too cold, according to your blog… ?? Fine enough to store cool In Ireland outside the fridge in a cool, dark place….

Many thanks for your question, and certainly applicable here in Singapore. I store potatoes in a brown paper bag, in a dark low cupboard. Potatoes can’t be stored for many weeks here (as they can be in Ireland), so best to use them up with a week or two of purchase. Hope this helps..
